This issue looks at what happens once the grape starts to decide: the turn itself, the separate decision of when to pick each plot, the underground reserve nobody sees until the heat asks for it, and the twenty degrees that can separate a scorching noon from a cold dawn.

Sometime in the first half of August one berry on one bunch goes soft under the thumb, and within ten days the whole plot has turned. Up to that moment the berry was building itself; from it, it begins to store. It is the switch on which the entire wine depends, and almost nobody comes to the vineyard to see it.
